When I saw these fishing cupcakes by easy cupcakes I knew I had to write a review on them today. Was I was younger I remember going fishing with the family In the summer holidays, sitting on the grass banks with a picnic.. I enjoyed this part more than actually waiting around to hook a fish!!

So with the kids now off school, why not take an hour out and bake a batch of fishing cupcakes. There simple to do and fun to decorate. A great fun idea to take on picnics.

Here’s my own super simple vanilla recipe for the cakes:

For the Cupcakes:
• 200g caster sugar
• 200g softened butter
• 4 eggs , beaten
• 200g self-raising flour
• 1 tsp baking powder
• 2 tbsp milk
 Method
To start with , cream the butter and sugar to a light smooth consistency, slowly beat in the eggs, and sift the flour mixing slow but well. do not over mix.
Evenly divide the cake batter between the cupcake case and bake for around 18-20 minutes or until the sponge springs back when touched.

For the buttercream:
•100g butter , softened
•140g icing sugar , sifted
•drop vanilla extract (optional)
•Blue Food Coloring

For the fishing rod, 12 pretzels
For the fish, cut out 12 fondant fishes, or use candy fish
For the line pipe on a small squiggle of icing.

Woww!! They look fantastic. Good to make for picnics also. Kids are going to love these. You just need to use special cupcake boxes to get them transported to the picnic place safely.
